WThis is an easy interpretation of a cocktail from the seasonal menu. It's a party-sized premix which is loaded with tastes of the holiday season, making it ideal for your festive gathering. Reserve the remaining syrup you can use for morning drinks, desserts, or to make more rounds of bikinis.
Bikini Recipe
Serves 10 people
For the Clementine Cordial (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Premix (yields 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
For the Syrup: Put the listed ingredients inside a saucepan, bring to a light boil, agitating so the sugar melts. Then, take off the stove and leave to cool down completely. Pour into an clean bottle, seal and store in the refrigerator, it will last for up to one month.
Preparing the Cocktail Base: Combine the specified spirits and syrup in a big jug, leave to sit for one hour, then pass it through preferably using cheesecloth, to ensure it's perfectly clear.
For serving: Measure 85ml of your batch mix into your mixing glass filled with ice, gently stirring carefully for one minute to chill. Pour into a cold coupe glass or similar, garnish with a few cranberries and finish using a light spray with the mandarin essence over the drink.
